So, you’ve bought yourself a knife…

Now let me tell you how to look after it.

Firstly, congratulations on your purchase of a bespoke knife. I hope you enjoy it for many years to come. In order to care for this properly please read the information below:

Please do not put me in the dishwasher.

The handle is made from seasoned, untreated wood and will swell up, lose colour, crack and warp if put in the dishwasher. The salts and aggressive washing cycles used will not only distress the blade but will also have a huge effect on the reactive carbon steel of your blade.

Carbon steel will take on a patina. You can always polish it back up and rub a little acid across the blade but the patina can also be really beautiful and is part of owning a knife like this. If left wet the blade will rust, which can be removed with a light wire-wool rubbing. It’s not dangerous or toxic for cooking with and is how knives looked for centuries before stainless steel was mass-produced so don’t worry. If you do want to prevent any patina or rusting then wipe your blade immediately after use and give it a light food-safe oiling with olive or vegetable oil whilst it’s stored (your handle will appreciate this too).

The knife is heat-treated so it is strong which also means it is slightly more brittle so try not to chop into bone, metal, hardened plastics etc and please try not to drop it onto a hard surface.
